Tonight we had my famous pan-fried chicken for dinner! Every time I make it I change it up and add something different or take something away. Here is the general recipe:
- 1-2 lbs chicken breast tenderloins
- 1 cup italian bread crumbs
- 1/4 cup parmesean cheese
- 1 tbsp red pepper flakes
- 1 egg
- 1 tbsp water
- Salt and Pepper
- 1 tbsp EVOO (extra virgin olive oil)
Start by seasoning the chicken with salt and pepper. Prepare the eggwash by combining the egg and water together. Prepare the breading by combining the bread crumbs, parm cheese and red pepper flakes. Dip the chicken in the egg wash, then into the bread crumb mixture, then repeat. Cook in olive oil until chicken reaches an internal temp of 160 degrees and serve.
You can mix it up when it comes to the breading. Sometimes I leave out the red pepper flakes, other times I add rosemary and oregano. Either way it's delicious. Tonight I made a pan sauce with the drippings from last weeks pork chop recipe I made. You can find that recipe
