A Tip for the Mamas-to-be*...

My midwife says I'm eating too much fruit and not enough vegetables. And that I should be eating the veggies raw. And that I need more Vitamin C in my diet. Unfortunately, I'd developed an aversion to raw veggies, and cutting out oranges meant LESS Vitamin C, so I had to get creative!

Bell Peppers (blech :P) have TONS of Vitamin C in them, apparently. And since we pregnant ladies also need TONS of protein, I've been snacking on "Hummus"-stuffed bell peppers!

For the "hummus" drain 1 fifteen ounce can garbanzo beans, reserving liquid. Add the beans with 1/3 c. olive oil to blender, with garlic to your taste (I used to be the Garlic Queen, but now I'm very sensitive to it!) and blend away until smooth, adding the reserved liquid as needed. Drizzle a little lemon, and salt to taste, over the top of the hummus and stir it in, and stuff it into your washed and halved peppers.

Vitamin C-Protein snackables!

*Well, and for anyone who needs more Vitamin C, less fruit, and more protein in their diet! :P

That sounds great!! I'm a big fan of hummus, and the red pepper combo is money. I like to use roasted red peppers with hummus on toasted pita. It's fun to feel a little Mediterranean every now and then. :) I hope you're feel good!

Whoops, sorry, kristine! I haven't checked back here in awhile. She has be bring in a sample of my first a.m. urine (sorry!!), and somehow she knows from that. They use this test strip that has, like, fifteen little boxes that turn colors, depending on all the different "stuff" you've got going on with you...when she said the thing about less fruit, more veggies, I was like, yeah, I pretty much hate vegetables, so you're probably right that I'm not eating enough of them! :P

I'm pretty sure, spoken as an 'existing mom' as opposed to a 'mom-to-be', that the perfect food for a pregnant mom-to-be is dark chocolate. Think about it... the cocoa comes from what?.... a bean.... which makes it a vegetable, doesn't it? and I'm sure that there is enough protein in it to be at least partially useful, if you eat milk chocolate you get some calcium, AND, best of all, it will cure mood swings, irritability, and several other fairly major issues. (plus it's really good). I know, I ate a lot of it when pregnant with Crystal and her brother, and just look at them! (lol) (p.s. I'm just kidding about the nutrition part - but not about the Crystal part)
