Black Bean Soup
1small onion chopped/diced
1small onion chopped/diced
2 carrots finely chopped/diced
Saute in 1-2 T oil and cook until tender.
Add 2 crushed cloves of garlic.
Saute about 1minute - do not brown (makes the garlic bitter)
Add:
2 cans of black beans
1/2 tsp. thyme
1 cup chicken broth /bullion
1can diced tomatoes
Cook over low heat for 5 min or until it starts to bubble.

Add:
3 T apple cider vinegar.
dash of Cayenne pepper (optional)
Cook over low heat for about 15min. or longer

this sounds really delicious. When I get back from Laf I will make this.
BTW i hate you for getting me hooked on Crisco, Butter Flavored Crisco and all varieties that lie within.
