So this is technically a muffin recipe, but I don't see why it cannot become a cake recipe with a little tweaking? I think you could just put a light powdered sugar dusting with sliced strawberries on it. enjoy!
Strawberry Muffins
yields 12 muffins
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup sugar (I think this could safely be cut to a half cup)
1 1/2 cups chopped strawberries
2 eggs
1/2 cup (1 stick) butter, melted
1/2 cup whole milk
1 tsp vanilla
Preheat the oven to 375. Combine flour, baking powder, salt and sugar in a bowl. Add strawberries. Beat eggs, butter, milk and vanilla in a small bowl. Combine wet and dry ingredients and stir.
Spoon batter into muffin tins lined with paper liners. Bake for 20-25 minutes.
place a sliced strawberry on top of each muffin after they have cooled.

THANK YOU, Kristine! I think I'll make cupcakes FIRST, and then start tweaking. We may go to a birthday party this weekend; if we do, I'll make them then as a "hostess gift" for the hostess (not the guest of honor), and let y'all know how it worked out!

i saw those! it's like ever since erin asked for strawberry cake, i've seen strawberry SOMETHING on all hte baking blogs.
Haven't tried it yet (going to the Farmer's Market in the morning for berries) but that strawberry basil granita on Coconut and Lime looks delicious, too!! :)
My kids and I loved these (I did reduce the sugar to 1/2 c). But today with fresh cherries in the house, I decided to try them with cherries and they were amazing! Yum!
