I relax so much better when my responsibilities are already taken care of - which is why this is sitting in my fridge ready to be popped into the oven this evening. Throw some potatoes in water to boil, and dinner is ready. Thanks, Jill. I'm excited to try it!
Now during Charles' next nap, I can really relax.
P.S. Erin, what do you serve for dinner in place of chicken since your hubby doesn't like it? Peter doesn't like it either, but I don't want to serve red meat all the time...

I know I have no room to talk because I am a very picky eater, but how do people not like chicken!?! It's so....innocuous, isn't it? I mean, I get tired of chicken, but it's so...plain. I know, I know, I don't like potatoes. So who am I to talk.
i don't understand the dislike for chicken either, but potatoes?! really? i can't imagine my life without potatoes...
Well, Matt says he doesn't like chicken because, God forgive me, but he had never had it properly prepared! My MIL has a fear of foodborne illness (and rightfully so; I can think of nothing worse than a household of five food-poisoned boys!), so chicken, fish, meat: all DONE to absolute done-ness, and sometimes a little beyond. The only poultry he'd ever had was drydryDRY, so of course he didn't like it. I LOVE chicken, so I decided I'd make it anyway, occasionally. And, guess what? Whenever I roast a tender, juicy, flavorful chicken, Matt has a HUGE helping and declares it the "best chicken I've ever had". :) I usually try to do a different method every time: lemon, rosemary-lemon, shallots-and-peaches, classic style, and each time he loves it. But when we're just talking about it, with friends, or whatever, he'll maintain that he hates chicken!
So, to answer Anne's question (finally!), I roast a chicken about every two weeks, and the rest of the time, I opt for fish (which Matt also loves, especially seared tuna!) and shell fish pastas, and even the occasional vegetarian night!
(Even though Matt "hates" chicken, he'll eat the leftovers in a chicken-melt!)
