Vegetables for Lunch HELP!

Ok ladies,

I have come to the conclusion that I don't get enough vegetables. While they are usually prevelant at dinner at my house, I can't seem to incorporate them into the lunches I bring to work. I have salads at home for dinner often, so i'm not too keen to bring them to work. Sometimes I grab leftover asparagus or broccoli that's in tupperware, but i'm looking for some more creative ideas for veggies at work. Carrot stick/celery i've done, so if you have any new ideas send the my way.

I prefer: green beans, asparagus, brussel sprouts, carrots, celery, sweet potato and broccoli. And uncooked spinach.

Sorry Miss Garby. I've been trying to figure out how to creatively put together a healthy lunch for Peter since January!! Then he just decided that all he wants for lunch is a sandwich and one side item - which made my life considerably easier - but does not help you out at all in the veggie department. Boo.

I have an awesome recipe that I just discovered for a penne spinich salad. Don't know if you're interested since you already bring a lot of salads to work. This is quite different from the typical salad, though. I made it last week for the first time, and it's ALL I wanted to eat for days! I'll post the recipe on the Food and Fellowship blog sometime soon.
